tablespoons plus 1 teaspoon fresh lemon juice

teaspoon granulated ale yeast (also ¼ cup lukewarm water)

1. If your fruit juice is chilled, allow to come to room temperature in a sealed container. Alternatively, heat to room temperature on the stove top.

2. Put fruit juice (including the lemon juice) into a 1-gallon glass jug.

3. Place granulated ale yeast in a teacup with the ¼ cup lukewarm water and allow to sit for several minutes.

4. Add the yeast water to the jug, and cap. Turn jug over several times to mix.

5. Bottle, and store in a dark place.

6. Test carbonation after 48 hours and again after 72 hours. When carbonation is right, refrigerate.
